I can't find the pineapple upside down cake recipe that is made in my Sunbeam electric skillet.  Can someone please post a copy?

Tim, try this...It really is good and this is from the Sunbeam book

Upside Down Cake For Electric Skillet
1/4 cup butter
1 cup packed brown sugar
1 can (20 ounces) fruit(Pineapple,Cherry or Blueberry), drained
1 package (18.5 ounces) yellow cake mix
Whipped cream or ice cream (optional)

Set dial on electric skillet to 220 degrees. Add butter. When melted, add brown sugar, spreading evenly over the surface. Arrange fruit over.

Prepare cake mix according to package directions. Pour over fruit. Set dial to 260 degrees. Cover and cook about 30 minutes or until dry on top.

Loosen edges of cake with a spatula. Invert cake onto plate. Let stand a few minutes then remove frypan. Serve cake warm or cold, garnished with whipped cream or ice cream, if desired.

A hint-

Use JUICE packed pineapple, and use the reserved juice instead of water! Adds a big flavour boost, and it works in the cake mixes I have used from Betty Crocker, Food Club, and Duncan Hines.

Drain the pineapple well.....I use my spaghetti drainer over my 8 cup Pyrex measuring pitcher.

Also, if you make real whipped cream, it is a delicious variation to put a little powdered ginger and less sugar into the cream before whipping.

Mike,

That's exactly what I'm talking about.  Thanks a bunch!!!

Lawrence,

Thanks for the hint about using the reserved juice, a definite will do.

I made the cake today, and it was a trip down memory lane for my wife.  She hasn't had this since she was in elementary school.  I'm also going to be making it next Saturday night, when we'll be having out of state relatives here for the weekend.  Thanks again to Mike & Lawrence!

P.S. I used an Aldi's yellow cake mix w/ pudding.

Made this in my vintage Farberware electric skillet, (huge round thing), had to increase temp about 15 degrees, turned out perfect!!! moistest cake ever.
