Here in Michigan, one of the very first crops to come in during the spring is radishes - I guess because they grow so quickly. We love them raw, but we also saute them in butter, too.

This is really awesome, I've tried the radish greens as well. I've never thought they'd turn out so good and tender. Lovely!

This reminds me of an old Bavarian recipe:

Erdinger Rettichsuppe (Radish soup, Erding style)

Take 1 white radish, diced
the same amount of young potatoes, diced
a handfull of smoked ham or breakfast rashers, cut up to stripes
1 or 2 bottles of black beer / wheat bear (if you cannot get the origianl Erdinger stuff, use some darker Kilkenny brand or Guinness).
some beef stew or veggie stew
salt and pepper
some crème fraîche (or sour cream).

fry and simmer both the diced white radish along with the potato dices until both have a nice golden surface (do not let them get really fried and brown).
Once they are taking color and the sizzle is getting less, fill up with that black bear until they are amply covered with liquid. Dilute some of the beef broth in the mixture.
Simmer for about 15 mins until everything is "al dente" but not soft.
Serve in soup dishes but retain them yet for decorating:
Spread freshly chopped parsley on all dishes. Add roasted toast cubes if you like.
Add some grated swiss cheese (Emmentaler) if you like and bake the dishes for 2 mins until melting.
Add some pepper and salt until decently spiced and tasting "rural/ farm like".

Bad thing about it all: Never reheat or store, this soup is turning bitter in a jiffy, always prepare and serve freshly.

Good point: Very rich and full of vitamins and minerals, yet very low calories. Helps you keep a slim diet.
 
Joe - thank you for sharing that wonderful Bavarian radish soup recipe! I don't know how low calorie I can make it with the cheese and sour cream, but that's OK with me! I stopped worrying about my figure a long time ago!

I will look for the Erdinger beer - I'm hoping I can find it here.
