Finding parts for commercial washing machines

Hey guys, I have a question for youse, when it comes to acquiring parts for vintage commercial machines, do you either try to find as many original parts as possible or do you adapt something Modern to work with the machine? A great example is the two machines I’m getting from Melbourne, both of them include dump valves, the presumably working of the pair has a Modern standard Laundromat dump valve, while the other machine still has some parts from the original valve that looked like it had a solenoid that squeezed up against the drain hose portion to pinch it shut, but it is missing some parts from that And. I’m debating on whether I should also replace that one with more modern and available parts that work with the machine or should I try and rebuild the entire drain mechanism which would be harder and more complicated.

Let me know of your thoughts
