Our daily bread and rolls. Easy peasy thanks to the mighty Bosch Compact.

900 g bread flour. 100 g of that is whole wheat just because.
585 g water = 65% hydration.
2 TBS oil
4.5 tsp instant yeast
2 tsp salt
2 TBS sugar

Knead for 9 minutes, let rise in mixer bowl for about 30 minutes in warm oven.
Punch down. Put in pans to rise about 30 minutes in warm oven. After 30 minutes turn on the oven to 350 and let bake, 25 minutes for the rolls, 32 minutes for the loaf.

Sadly the Compact was discontinued a few months ago in N.America and no longer available. So luckily I got mine with the blender attachment on sale for cheap which was probably a clue they were clearing them out. Since I got it I haven't used my Universal at all.
