A Rational Combi-Oven out of Germany. These will do anything: bake, roast, steam, Combi-cook, rethermalize, broil, cook and hold or slow cook. They will also clean and descale themselves, all automatically! I'd love to get the chance to work with one. They are the Hobart dishmachine of ovens.

Rational

This is quite an old model by the looks of it and this 62 (6 grid) appears to be a lot wider than the 61/101 (101 is ten grid) models although still pretty wide for a domestic setting. They require water and waste services and ideally be placed under a canopy (even the electric ones) to deal with the steam coming out of the top of the oven. Also need 3ph power supply

As Nick says they are very versatile and my company sells loads of them, there is hardly a kitchen of any size we supply that does not have at least one and quite often in a multi range situation a range gets swopped out for one of these as it will do some much more in more or less the same footprint.

There are other makes as well of course MKN and Convotherm being two that come immediately to mind
