Here I am. The dishmachine you are looking at is a model AM-12. It could be configured in multiple single and 3 phase voltages. While I have used this model and found it to work very well it is not the best pick for your application. Primarily due to parts availability which because of the machines age will be an issue. Also there is the issue of water and chemical consumption which is rather high in this model.
you would be much better off going with an AM-14(parts available, more efficient, better rinsing and more reliable controller). Or better yet an AM-15 Select with built in booster heater and Sense-A-Temp technology to insure sanitation. Of course any older machine will need an external booster to achieve the 180f final rinse required to pass health inspection. Just look on your local CL they show up all the time..
