Every now and then, I get the urge to bake..Today was one of those rainy Florida days. So here goes...

Homemade red velvet cake with fresh cream cheese frosting. Chopped pecans are added as a finishing touch.

Hey Shane,

I bake Red Velvet Cake too, but I frost mine with homemade buttercream frosting. I inherited my Grandma Wilde's recipe box, and this recipe is one of our family treasures.
 
Shane I sure hope you are planning on coming to Omaha in September and feel free to bring one of these along! One of my favorites for sure.

I would love some more of your homemade cookies, the last time you made them for me was when we lived in South Beach. Remember? I think you are long overdue.

Red Cake frosting

Red cake is my favorite too!! Although I have never had it with out the Red cake frosting from my original recipe (from my grandmother); 1 cup milk, 5Tbls flour. pinch of salt- cook until thick then cool completely. When cool mix with 1 cup sugar, 1 teaspoon vanilla, 1/2 cup crisco, 1/2 cup oleo-beat until smooth. Frost cake and let set overnight befor eating. ( I know it doesn't sound good, but trust me, try it once and you won't want to eat Red cake any other way). jeb
 
Red Velvet Cake recipe,

Here is my grandma's recipe:
1/2 cup shortening
1 1/2 cups sugar
1 cup buttermilk
2 cups flour, sifted
1 tbsp. cocoa
1 tbsp. white vinegar
2 eggs
1oz. red food coloring
1 tsp. vanilla
1 tsp. baking soda

Cream shortening & sugar, add food coloring, eggs & vanilla. Sift dry ingredients 3 times, add alternately with buttermilk. Beat until smooth, mix soda with vinegar and fold into batter. Pour into a greased & floured 10in. tube pan. Bake at 350 degrees for 30 minutes. Let cake cool in pan at least 1hr. before removing.

Frosting:
1 cup milk
2 tsp. vanilla
3/4 cup sugar
1/4 cup flour, (Wondra works great)
1/2 tsp. salt
1/3 cup shortening
1/3 cup butter

Mix milk, flour & salt, cook until thick, cool. Beat shortening and sugar until fluffy. Add cooled flour mixture and vanilla. Beat until smooth.
