This Easter we had my brother and his girlfriend for Easter Dinner at our house. Jeanne doesn’t eat beef or pork and I’d planned on having Lasagna for dinner, which I usually make with Italian Sausage. So I set out to find a recipe for making Italian Sausage from ground turkey and the attached link is what I came up with.
The results were really much better than I’d expected, really just as good or better than pork Italian Sausage.
The recipe is as follows:
1 lb. of 93/7 Ground Turkey
2 tsp. garlic powder
1 1/2 tsp. fennel seed, ground ( I used a mortar and pestle)
1 1/2 tsp. sugar
1 tsp salt
1 tsp oregano
1/2 tsp black pepper
Mix all the above ingredients together and sprinkle over the ground turkey and mix together well with a large two tined carving fork. Cover and leave in refrigerator overnight for the flavor of the herbs and spices to fully impregnate the ground turkey.
Use in any recipe calling for Italian Sausage or form into patties and fry. The Lasagna came out great and was a hit with everyone.
