All Rise for the Verdict

The older dough hooks are much easier to use, nothing intuitive to know and they mix very quickly. I had forgotten how much I loved the texture of bread made with dough hooks from the newer Sunbeam. You really have to know what you're doing and have all hands on deck. The hooks mix very quickly and make the most amazing bread of wonderful texture. For the short term I'll be Sunbeaming bread but it will wear off and I'll be back to the Kitchenaid for it's dump it in the bowl and forget it ease.

The Party's Over

I helped with a fundraiser yesterday making the desserts. There was a selection of fruit cobblers, hot fudge cake, trash can cookies and homemade ice cream. At the last moment the auction chair wanted desserts pre plated. What a disaster trying to fit 4 runny items in an 8 ounce boullion and perch the cookie on top. The ice cream was nixed in favor of pitchers of heavy cream which no one used. The auction chair is the type who prefers liquor to dessert and never touched hers after the drama of demanding the switch If I had know I could have a made one dessert that looked better plated. If you hear me breathe a word of helping again with this group please drop by and smack me. It was all gratis of course ingredients included. My fourth and final year fo doing this and every year it gets tweaked at the end. You can see some of the desserts in the background.

I've gotten the impression you don't do baking for any reason other than the enjoyment of baking, so take that thought away, and forget the Chair's last minute changes. I'm sure everyone enjoyed the deserts regardless of how it was served.

Many times I've done something for someone and had a different outcome than what I had anticipated during the process. The effort was still appreciated however.
 
One the Auto Pilot Goes On

The guests enjoyed the dessert. I worked as a server during dinner so I got to visit, tease and play with the guests. My fault is compartmentalizing and organizing each segment of any job or task I do. I get locked in half way to the destination and when someone throws a wrench or idea into the works my first assumption is that they're an idiot because they haven't thought the project through for the most efficient conclusion. The older I get the easier it is to hold my tongue. There's no way I would have made 4 spooned deserts for a preplated dessert choice. If they'd only said something I could have made a spectacular showy dessert given to preplating with gusto.
 
I Have Had Enough Bread and Demand the Zone Diet

I know, its getting boring to discuss so much bread. I made onion bread for dinner tonight. There is an enzyme in raw onion that retards the growth of yeast. Cooking the onions in butter releases the most fragrant and sweet flavor.

Pump It Up

When folding, stretching and beating most usually it doubles in bulk. Its the punching it down after its risen that requires technique and skill that comes from years of practice.
