Allow the dough to rest giving the gluten time to relax. Roll the dough into a circle and brush with sesame oil and then sprinkle with finely chopped spring or green onions. Roll the pancake and then make it into a coil. Roll the coiled pancake back into a circle the size of a tortilla.

I do all frying in an electric skillet. This old Sunbeam from 1960 was the first model Sunbeam made with a detachable cord. The pan is heavy aluminum and lined with stainless steel. The lid has a clip on the side which catches in the helper handle. The tilted lid acts as a splatter guard. Under the handle is a flip down leg which elevates the skillet allowing fat and drippings to drain away from food.

The mid 60's were an exciting time for Sunbeam design. The new MM mixer was introduced along with 3 sleek chrome percolators and 3 stainless clad frypans. These aluminum frying pans weigh a ton because they're covered inside and out with stainless steel.

All My Life is a Circle
These models were available in round, oblong and a smaller oval shape. The pans were introduced about the same time Teflon was becoming popular and sales of the fancy pans slumped. Only sold for a few years they are hard to find.

I've been looking everywhere for an electric skillet like your 1960 model. My wife had a Teflon coated GE that she got with Raleigh cigarette coupons in the early 1970's, in avocado. It also had the flip down leg. Great for frying bacon, etc. I've never seen any on Ebay, or else I'm just not looking hard enough.

The Only Reason to Run Appliance Rescue
I cannot possibly use or enjoy all the appliances I have. When a "treasure" throws itself in my way, 99% of the time its gifted to someone else who will enjoy it's performance and respect it's rarity. I am most pleased to be able to find a good home for this iron clad workhorse.

I don't mean to put Kelly on the spot, but he has to be the most giving person on earth. I just received the square Sunbeam frypan pictured above today, via UPS. I merely mentioned that I had been looking for an electric frypan with a flip-down leg like the GE we used to have, and voila' it came packed like it was ready for an around the world trip. Thank you Kelly!
