One of our favorite things to make for breakfast (or dinner) when I don't feel like fussing with multiple omelettes. I think of it as a quiche without the crust!
My mom used to make great fritatas (she was raised with people from Italy and pronounced it free-tata) in her Sunbeam electric fry pan. I have a 20" skillet that makes the best southern fried foods. Trick to cast and frying is to NOT flip it but 2-3X during cooking. Let that nice crust build up.
