Its time for..A Southern springtime dish

We called it Killed Lettuce, but I have also heard it called wilted lettuce.., In a large bowl,tear into small pieces leaf lettuce, chop two spring onions, green tops and all, sprinkle with vinegar, salt ,pepper and sugar, fry about 1/2 pound bacon until crisp, crumble over lettuce mixture, heat grease until it smokes, then pour over lettuce mixture, toss well and serve, I grew up on this!!!Serve with hot cornbread.

My Grandma Maggie used to make this all time, I didn't really care much for it.

Used to have this all the time during the summer - grandma put chopped hard-boiled egg in hers. Haven't had it in years!

my grandmother and mother made wilted lettuce all summer...I couldn't swallow the stuff!!!!..it was too greasey for me even as a child

I've had variations on this, but never quite like you describe. It sounds wonderful - anything with bacon (drippings and all) is good in my book!!

This works great with with fresh spinach leaves also.

Haven't had it with lettuce, but have had a similar dish with spinach. Made a roux out of some of the drippings then added a little white vinegar, sugar, water and seasoning (pepper, a pinch of granulated garlic) to make a hot, thin dressing, and poured it over the spinach, scallions, chopped hard boiled eggs and crumbled bacon.
