Bain Marie
It's called a "Bain Marie" like what you would do to bake something gently by placing a custard in a hot water bath. Only, in this case, it's a refrigerator that has an open top for keep prep items, like sliced tomatoes and tuna salad, chilled for service at a sandwich shop. Very nice and useful if you're serving a lot of people at the same time. Not that big a deal if you serve food out of your own kitchen where the local health department won't be coming over for surprise inspections.
In my neck of the woods here in Connecticut, local restaurant owners call it a "Bane" like the bad guy in Batman.
