junk versus good pans

My mothers good saucepan does not work well on my coil hotplate

But does on my cast iron hotplate

but my crappy saucepan works great on both

I always thought cast iron was even heating but definitely not. I didn't start using cast iron until about 10 years ago.

My stainless steel Farberware fry pan is much better suited to the task of even heating.

I invested in a couple of pieces of All Clad... Worth the money I paid for them and they'll probably outlast me.

I bought a 12 piece set of Tramatina 3 ply cookware last year, very nice.  It's just a tiny step down from All Clad but the cost savings are great.
