So, when I went to the store the other day they had a special offer on bags of little colored peppers! I had to buy a bag since they were so cute. Used a couple to cut up for the salsa, then a couple for salad... but then decided to stuff a few for a main dish! Basically seasoned ground beef the same as I would have meatloaf, then stuffed and baked in a simple tomato sauce. I should have added the pork meat from 1-2 italian sausages and some breadcrumb, but otherwise they were good for what they were!

For tonight, I've made a ham. Double boiled to remove salt and excess smoke, then baked with a glaze. Rich is bringing home the veg of his choice- a mystery!!!

With the leftover ham you could make hamloaf which is very similar to meatloaf.

 

2lbs ground chuck

1lb lean ground pork

1 ½lbs ground smoked ham

1 1/3 cups Ritz-type cracker crumbs

2 tsps salt

1 ¾ cups milk

3 eggs

1 small onion, chopped

1/2 tsp. pepper

chopped parsley

 

Mix together like you would for meatloaf.  Pat into baking dishes and bake @ 325 degrees for 1 ½hrs. or until done.

This recipe can be easily cut in half.

 
 
I love stuffed peppers, I usually do green bell peppers stuffed with a beef/pork mixture and I use rice as a filler instead of breadcrumbs.
In thye summer I make a lot of stuffed Hungarian wax peppers or ones similar to what you used. For those I stuff them with garlic sausage or sage sausage and rice.
Of course cooked in a tomato sauce
