So, when I went to the store the other day they had a special offer on bags of little colored peppers! I had to buy a bag since they were so cute. Used a couple to cut up for the salsa, then a couple for salad... but then decided to stuff a few for a main dish! Basically seasoned ground beef the same as I would have meatloaf, then stuffed and baked in a simple tomato sauce. I should have added the pork meat from 1-2 italian sausages and some breadcrumb, but otherwise they were good for what they were!
