Cornbread skillets
Great idea Joe we buy that Jiffy corn muffin mix at Aldi's. It's about $.52 a box
I have some small cast-iron skillets that are porcelain coated, which I prefer, never been comfortable with using cast-iron because the oil coating becomes rancid and becomes a carcinogen. I prefer using the ceramic coated stuff that you can put in the dishwasher and get it really clean between uses.
Certainly a great idea. I'll probably get some of my homemade chili out of the freezer and bake up some cornbread to go with it for lunch today, thanks, John.

My mom used to buy that because my dad liked it, but she knew how to make real cornbread, being from Mississippi. Said the mix was too sweet, almost like yellow cake.
The real thing has very little sugar. My Aunt Julie makes it with white cornmeal in an iron skillet. The best cornbread around here is the muffins at Cracker Barrel.
