I'm just old enough to remember them, but self-serve, IIRC, had begun just about the time I started to drive.
It was weird when I'd go to the Miele USA office in NJ because all stations there are "service." I won't say full-service because it's rare that you'll get anything other than a garumph after letting the attendant know what you want, and nary a "thank you" at the end. However, I did run across one when Rich and I were coming back from OH with 200-some typewriters last fall. He was very pleasant, offered to wash the windshield, and... wait for it... smiled!!! I was impressed enough that I bought a few scratch tix and gave them to him with a "TY and good luck!"
Here in MA, full serve is mandated at self-serve prices for the h'capped. I'm sure it includes pumping the gas and that's it.
