Making Watermelon Salad

Ralph's comment about using the melon baller as an ice cream scoop it smarter than it seems! Use the large scoop to make balls out of high end choc ice cream. Put in wine stem and drizzle raspberry liqeour (sp) over it. OMG.
Watermelon salad looks very refreshing...and I have diced watermelon and fresh basil in the fridge. No feta, but will try subbing aged Swiss. But what's this? A recipe requiring no vintage range?

Seriously, this recipe sounds quite tempting...particularly now that we are in a streak of 90 degree weather.

Probably not too popular here at "The Home"
<span style="font-size: 14pt; color: #008000;">Watermelon with vinegar and chives. I'm sure this is delicious and very "21st century haute cusine" to many but not this old man. I have a mouth full of uneducated taste buds and they're all too old to learn anything new. I was at a restaurant recently and they served a green salad that contained thinly-sliced beef steak and strawberries. I wouldn't be surprised if they had apple pie with beef gravy on the menu. Thank goodness they still make TV dinners. </span>

Not a big watermelon fan here, but I picked up a seedless one at Costco Friday and it's been chilling in the fridge since then. The salad and cheese treatment sounds like it would perk up what is generally a too bland food, so I may give that a try. No fresh basil in the garden today but I could always pick some up at the local hacienda. I do have fresh oregano but that might be overkill.
I'd also probably try substituting Parmesan for the feta, or maybe some swiss. And I have some red onions so they could sub for the chives.
Another idea for salads: slice up some sweet Fuyu persimmon and use it as a tomato substitute. Surprisingly good.
