This looked good and Ron Jones said he had made it and liked it, This ones for me as Donald wont touch it..it has pineapple in it
1 1/4 cups cooking oil
2 cups sugar
2 eggs
2 cups shredded carrots
1-8 oz can crushed pineapple undrained
3 cups flour
1 tsp soda
3 tsp cinnamon
1 tsp salt
1 tsp vanilla
1cup chopped pecans or walnuts...I use pecans, I cant stand walnuts.
Heat oven to 350, grease and flour 2 loaf pans.
Beat oil, eggs and sugar well, add carrots and pineapple, mix well.
add sifted dry ingredients,add vanilla and nuts, divide into the 2 pans, bake 1 hour or until tests done..Serve warm with honey butter.
 
I have a confession...

I had a senior moment when making this....After I made it I read the recipe again,..I thought it said a 18 oz can of pineapple....so I put a 20oz can in...not 1-8 oz!! It turned out wonderful anyway...I thought the oil seemed a bit much, but it worked fine, moist and very good!...Its kind of like my Mothers sweet potato pie..the first time she made it she put in 2 tbsp. flour instead of the 2 tsp it called for..it was terrific so I told her not to change it!!!LOL
