I get some recipes popping up on my news feed, and since I've been making a fair amount of poached eggs lately this "smashed egg" recipe caught my eye. I hate how writers give every detail of how they make something -I'd just like the recipe - but this one is over the top. Read through it.
The writer is not a 12 year old. She has national exposure as a political writer, reporter on ABC ect. She appears not to know how to boil water! The copy editor did her no favors by making her seem inept. Sad. The length of the article could have been cut by half.
Anyway the result was quite good, I did add a few slices of avocado as I had a nicely ripe one handy. The ground mustard adds a twist to the taste. I used some brioche buns I had as a base. I'm waiting on a Pullman bread pan to arrive today, I have the dough ready in the fridge for when it arrives.
I'll make this again.
