This was one of my mom's most requested cakes. It's super moist, has lots of banana flavor, and a cream cheese frosting - how can you go wrong?? (Unless you don't like bananas!)

This will go into my

To do file!!! I LOVE bannanas, have you ever made banana pudding and added pineapple to it, Donald wont eat a bite of it but I LOVE it.

Since I have no intention of letting my Type 2 Diabetes put me back in the hospital for another week, I'd have to make some changes to that recipe and leave out the cake mix, the eggs, the bananas, the cream cheese, the butter and of course the powdered sugar. However, this would be a great thing to make and take to a dinner party and watch all the "healthy" people enjoy it.

My partner is a Banana bread lover.

I make Banana bread at least every couple of weeks for him. He sometimes cuts a slice and puts a little cream cheese on top.

So when I told him about this recipe he wanted to try it. I made it yesterday and have to say you're right. This cake is delicious!! The only difference was I added some chopped walnuts because he likes them but other than that followed your recipe. I really like the fact that the frosting is not overly sweet. Some are so sweet they overpower the taste of the cake but not this one. Mine took a little longer than 40 minutes though to bake through. I have a thermometer in my oven that said it was 350 but who knows.

This sure is a great recipe.

Thank you.

Chach - so glad you liked the recipe.

Joe - we don't want you back in the hospital, and if you leave out all the ingredients you can't have then you are pretty much left with water. So enjoy a tall glass!! It's good for you ;-) A bite of this cake brings only temporary pleasure, but good health lasts a long time ;-)

Next time let's have a cameo shot of Maryann

Please don't get me wrong. This cake looks great. I especially like the idea of using a boxed cake mix as opposed to measuring flour, baking soda and powder and all the other stuff cakes require. The covered disposable pan is smart thinkin too, especially if you have friends like me that never return containers.

I've been invited to a party on Sunday...part Cinco de Mayo and part good-bye to a snowbird friend who is fortunate to escape the desert heat and return to her home in Canada for the summer...and I'm going to make your mom's cake. Of course no licking the cream cheese frosting from the spoon.

Kevin, the cake turned out great, made it yesterday and half gone already. I did have some trouble finding the correct size cake mix though. Most of what is in my local market has shrunk to 15.5 oz. Found a 16.5 and used that.
