Made this last week, it is good and different, I will send this out in memory of our friend Terry, I can't think of good food without thinking of him.
Brown Sugar Glazed Meatloaf
2 lb ground beef
2/3 cup chopped onion
1/4 cup green pepper chopped- I leave this out.
2 beaten eggs
1 tsp dry mustard
1/3 cup catsup
1/3 cup canned milk
1 Tbsp worchestershire sauce
1 1/2 cups quick cooking oats
1/4 tsp garlic powder
1/4 tsp ginger
1/4 tsp each, salt and pepper
Saute onions 4 to 5 minutes in a tbsp or two of butter, cool,preheat oven to 350, spray either a large loaf pan or a 8x8 deep pyrex dish, I use the latter, Whisk eggs,salt,pepper, worchestershire sauce,mustard,garlic powder, ginger and milk in med bowl, in large bowl, combine ground beef, oats and onions, mix in wet ingredients well, pour into prepared pan, with the handle of a wooden spoon, punch holes thru loaf all the way to the pan at 1 inch intervals, top with the following glaze,1/2 cup brown sugar and 1/2 cup catsup well blended, spread evenly over loaf, making sure it soaks into holes, bake for 1 to 11/4 hours, cool 10 min before serving.
