New Recipe! Rosy Rhubarb Pie

I bought a church cookbook from St Johns Lutheran Church, in Kasson Minnesota, in it I found this, since I had a lot of rhubarb, I tripled it and made 3...my pie crust ran a little short, so I put lattice on one..
4 cups cut rhubarb
1/2 pkg strawberry Jello
4 tbsp tapioca
1 1/2 cups sugar
1/2 tsp salt
Mix dry ingredients, pour over and mix with rhubarb, let stand while making pastry for a 2 crust pie.." I cheated and used Jiffy pie crust mix",place pastry in a 9 inch pan,add filling, top with 2 tbsp butter, add top crust and bake 375 for 1 hour.

How I love rhubarb.

My grandmother had two big clumps of it growing next to the back porch, and I guess the first pie I ever made was a rhubarb pie.

 

I wonder how many people outside the Appalachians (and maybe the Ozarks) know about rhubarb pie? The English and Russians love it, but it seems to be nearly unknown in all the US cities where I've lived as an adult.

These are good looking pies!! Rhubarb season ended here a couple of weeks ago but I have a freezer full so I'm thinking I may have to make a couple of pies. Hope they turn out as yummy looking as yours!!

We have rhubarb in stores here.  Or should I say, we did.  The season is apparently over.  I'm still working on coaxing it to establish itself in my yard.   This year I planted roots rather than live plants and, knock on compressed sawdust, it's hanging on.

 

I love all things rhubarb, and look forward to giving this pie recipe a try.  It's the standard/small size packet of Jell-O, right?

Made this pie today and it turned out great!  I expected the Jell-O to have more influence over the flavor but I love all things rhubarb so it tasted fine to me -- I had a second slice!

 

I did get a small mess on the oven bottom, but it's due for a self-clean anyway.

I will always remember the crumb top strawberry-rhubarb pie I had at an Amish restaurant in Sarasota. It was easily over three inches tall.
