One of the ladies that Ralph works with brought it into work one day and Ralph raved about it. He had been asking me for a while to make it, so here it is! As cakes go, it couldn't be much easier and starts with a box cake mix. It was very moist and had a wonderful flavor. The recipe from Ralph's co-worker called for a Cool Whip based frosting, but I changed it out for heavy whipping cream instead. It was a delight!

Just like the Bundt cakes that I make, but usually w/ liquor in 'em...

I happen to have a pistachio pudding mix--one of a few that the others made a pie, then put in mugs topped w/ marshmallows and mixed nuts...

So I would love to make this recipe, and w/ a white cake mix I have (I will have to carefully separate the egg-whites) someday...

I love pistachios, but there's a lot of different pudding flavors you could probably use. I especially like banana-flavored things. I think I will try doing that perhaps with a little help from some banana flavoring. Sliced bananas on the top would be nice. Is there any way you can keep the fruit from darkening right away? I'll take a photo if my cake looks close to being edible. </span>

 

<span style="font-size: 14pt; color: #008000;">Concerning my white & chrome Sunbeam mixer...It arrived and cleaned up like new, but unlike my mom's Mixmaster, this one's the "little bird" model, cheap cheap cheap. Except for the beaters everything's plastic including the "chrome". I kind of knew this before I bought it. The Electronic Speed Control was a dead giveaway. But it's fine for what I'll use it for. I bought it for the way it looks with the light on.</span>
 
Glad you advocated for this one, Ralph! It looks delicious. 

 

As Joe mentioned, recipes that use a cake mix as the base go to the head of the line in my recipe file.  Measuring out flour, sugar and leavening isn't difficult...but using a box mix somehow feels easier.  

 

A rarely-used Bundt pan went out the door in the Great Downsizing of 2017, so I'll have to use a 13' x 9" pan---although you're right, Kevin, the presentation factor is boosted using a Bundt pan.

JOE - I seem to remember those later models having a lot of plastic parts, but they were still handsome machines. And under the right lighting, don't we all look marvelous? :-)
 
Pistachio Pudding Cake

Thank you Kevin for another amazing and easy to follow recipe. You really need to have a cooking show about back to the basics...at least for real people who don't have a million things in their cupboards. Ralph you rock too!
