I just wanted to thank whomever it was who recently posted the pound cake recipe. It is wonderful, and I happened to find the McCormick vanilla butter & nut extract on sale at the grocery store. I drizzled a semi-sweet chocolate icing over it for a nice flavor contrast. EXCELLENT!

My wife loves pound cake, so it was a big hit with her. If you like a lemon flavored cake this is a good recipe to try.
Sun-Drop Cake
1/2 cup butter or margarine
2/3 cup vegetable shortening
2 1/4 cups white sugar
5 eggs
1 tsp. vanilla extract
1 tsp. lemon extract
3 cups sifted all-purpose flour
1 tbsp. double acting baking powder
3/4 cup Sun-Drop, Mtn. Dew, or Mello-Yello
Cream butter and shortening together well; add sugar gradually, beating until fluffy.
Add eggs one at a time, beating well after each. Blend in flavorings. Mix baking powder into flour and add alternately with the soda pop in thirds. Pour batter into a 12-cup fluted tube pan which has been greased and floured. Bake at 350 degrees for 55-60 minutes or until cake tests done. Let cake cool before turning out of pan.
Icing:
1 1/2 cups powdered sugar
1 tbsp. lemon juice
2 tbsp. shortening, melted
1 tbsp. Sun-Drop, Mtn. Dew, or Mello-Yello
Beat all ingredients together until smooth and creamy. Spread over top of cooled cake, allowing frosting to drizzle down sides of cake; do not completely frost cake.

This is the recipe I originally wanted to post last night but couldn't find it in my recipe archives until this morning. This was published in one of my wife's company newsletters several years ago. She's the office supervisor at the Pepsi distributor here in Wausau.
Pepsi-Cola Cake w/ Broiled Peanut Butter Frosting
2 cups flour
2 cups sugar
1 cup butter or margarine, melted
2 tbsp. unsweetened cocoa
1 cup Pepsi (or Coke), with fizz
1/2 cup buttermilk
2 eggs, beaten
1 tsp. baking soda
1 tsp. vanilla extract
1 1/2 cups miniature marshmallows
Cake instructions:
Preheat oven to 350 degrees. Grease and flour a metal 9x13x2 inch cake pan. Combine flour and sugar in a large bowl. Combine melted butter, cocoa, and cola and pour over flour and sugar mixture. Stir until well blended. Add buttermilk, beaten eggs, and vanilla. Mix well. Stir in marshmallows. Pour into prepared pan. Bake 40 minutes. Remove cake from oven and frost while still barely warm.
Frosting:
6 tbsp. butter
1 cup dark brown sugar
2/3 cup smooth peanut butter
1/4 cup milk
2/3 cup chopped peanuts
Frosting instructions:
Cream butter, sugar, and peanut butter. Beat in milk. Fold in nuts. Spread over cake. Place frosted cake under broiler about 4 inches from heat source. Broil just a few seconds, or until topping starts to bubble. Watch constantly, and be careful not to scorch frosting! Let cool at least 30 minutes before serving. Serves 8-10.

This cake and frosting are extremely sweet, so beware!

I also love your pound cake, my family also loves it, I have been making it weekly here since you shared your recipe. I was unable to find the Vanilla Butternut flavoring, I was however able to find it from LorAnn oils, it is a more concentrated version for candy making, so I use 1/2 dram in place of your measurements.

I made the pound cake a second time cutting the baking time and it was great! Everyone's ovens are different and the hour and 15 minutes was too much in mine. Just a little over an hour was perfect.
