One of our new favorite pies! The tart rhubarb and the sweet pineapple...makes a nice change from the traditional strawberry rhubarb. And I have a ton of rhubarb in the freezer, so this was a great way to use some of it up!

 

 
Oh.My.God. Kevin, that pie looks so good. Damn my stupid pre-diabetes!

Aside: How did I live this long and not know about spaghetti squash? Bought a couple, baked them off and have been adapting spaghetti bake recipes that I haven't been able to eat for a year. Good stuff.

substitute the sugar with Splenda. You are allowed one piece in exchange for another fruit or carb. Not every day now, give the rest away. My better half used to be a dietician.
My sister told me last week she knows Kevin, and has been in one Cavalcade of food episode. She couldn't remember which one, but it looks like she has been making several of his delicious recipe's, but she isn't much of a cook. She worked with Ralph at WDET radio way back when.
Their names cam up as we were conversing about a good restaurant she went to, "Dacey's" west of Lexington Mi. where their cottage is. She has been there.
Having survived ovarian cancer for four years now, she is living life to the maximum!
 
Splenda is definitely my friend these days, but between the crust and the pineapple it would still tip me well over the carb limit for a meal.  I found the inner strength to eat only the toppings off pizza, but doubt I can withstand the temptation of pie crust, LOL.

 

Am substituting Splenda in recipes for things like three bean salad and refrigerator pickles, which I can now enjoy again.
 
True Eugene,

carbs from white flour are not a friend either. My better half eats burrito bowls without the tortilla.
What about gluten free pie crusts, or made from svelt flour?
Maybe it's a no win if they have no texture or flavor.
How about just making the filling? I'd eat it with my whole bran for sure.
I love grape nuts cereal, but the bran has more fiber, and lower calories.
Darn Diabetes! My mom's was very brittle later on in senior years, but my dad had a 120 number after two years of hemo dialysis and dropping the weight.
I bet they come up with a treatment or cure at least for type 2 soon. They are close with the pig pancreas cells now. So long as ultra conservative views on stem cell use or genetics don't kabash it all.
I'm sure just as many ultra conservatives are diabetic.
