Broken ribs, that is.

Yeah, a week ago I took a wrong step working on the carport roof and put a foot through the ancient corrugated fiberglass. Luckily a cross beam caught me before I fell all the way - but I landed on the beam on my left side and pretty sure I cracked a rib. But it was a week ago and everything seems to be healing OK. Thank God I kept the vicodin from my last mishap 3 years ago ;). No internal injuries and I'd probably know by now. I've kept on working on the roofing/gutters - just have had to move rather slowly doing certain things - and now all the gutters that needed cleaning and screening are finally done. Whew!

Seriously, I'll probably thaw out a turkey and stick it on the BBQ rotisserie for Xmas dinner.

But there is that vacuum pack of baby back ribs at the bottom of the chest freezer... hmmmm....

;-)

For the past several years we haven't done turkey for Chrismas dinner. To tell you the truth we are bored to death with Turkey. Last year we had a crown roast, the year before, Prime Rib and Goose the year before that.
Do what you like. It pays to be adventerous!

We having Christmas at my sister's house on the 27th. We're having homemade chicken dumpling soup, garlic cheese bread, and homemade bread pudding w/ vanilla hard sauce.

Nothing like a good Christmas goose.

We do so many different things for Christmas, and until lately not ham. Enter smoked/honey spiral ham....

Yummers.

IIRC Christams is mostly about a a good meat-and-spinach lasagne (beef). The other meats come from the appetizer of small metballs (turkey) and chicken drumsticks; broiled, lemon oreganato.

The Puerto Rican ex in-laws were all about the pernil (roast pork), rice and beans. OOOOOHHHHH I miss that.......

My wife is going to make her fantastic ham & scalloped potatoes just for me on Christmas Day w/ scalloped corn, and fresh homemade brownies w/ vanilla ice cream. Sounds like a dairy overload, doesn't it?

Scalloped potatoes & ham

Oh, my favorite!! Can I come over??? :-)

My Mom always makes me some when she visits & she'll be here on 12/26. YIPPEE!

Here's Great-Aunt Helen's Scalloped Corn,

Mix together:
1 can cream style corn
1/2 can evaporated milk
Scant 1/3 cup sugar
1 tsp. cornstarch
2 eggs, beaten
Butter a casserole dish, pour in corn mixture. Bake 1hr. @ 350 degrees. Should look like a custard when done, will firm up a little as it cools.

Glad you're still in one piece Rich even if the roofing isn't.

This is the first holiday season without my mom and we weren't planning on doing anything super involved for Xma$ day, then we got invited over to our friend's place for prime rib and potato pancakes so we took her up on it. We'll do Xma$ eve at my partner's parents, a big family foody scene there (including home made tamales with filling from absolute scratch--yippee!), which has been a customary visit over the years for the two of us. It all worked out really well, as our friend was only going to have 3 other Xma$ orphans in attendance until we RSVP'd so it should be a festive Xma$/Hannukah celebration. Mmmmmm . . . prime rib good and rare so it melts in your mouth--I can't wait!

Thanks Ralph. I guess I'd rather have a cracked rib or two than a cracked skull or broken arm/leg. I was up there the next day to repair the big hole because it was fixing to rain again. I'm finding I can work on the house for a day or two then I need a day or two off to recover... but it's feeling better now... can get in/out of bed without too much groaning, lol.

Melt-in-your-mouth prime rib is my favorite kind ;-). If I tend to the BBQ all day I can make melt-in-your-mouth roast/smoked turkey. And I just might do that. Have some nice aged cherry and nectarine wood just waiting.

Traditional Christmas dinner here is homemade ravioli in either chicken broth or with sauce. This year, I'm making meatballs to go with Rich's father's ravs.

Christmas Eve was always a meat/cheese platter because most of us worked at least part of the day, and we'd make sandwches before opening gifts. This year, the first with the house ours and Rich's parents as guests, will be prime rib, garlic mashed 'taters and asparagus (stinky pee the next morning!!).

Chuck

p.s.- I love a good ham, and use leftovers for ham & scalloped potatoes. Great dish!!!

Forgot-

I took a pic before we started grazing Christmas evening. A big bowl of homemade spinach + cheese raviolis and meatballs in sauce (and a little chianti on the side)!
