Yiannaki (Johnny) My aunt [tia politica en espanol]by marriage not blood, learned to make Phyllo (filo) dough by hand from my grandmother (her mother-in-law)who was from the north of Greece. It is my understanding that these pies are a northern Greek/Balkan specialty.
I've got the spinach & cheese down to a science, now to get into leeks and cheese, cheese alone and cabbage(saurkraut).
Other variations include bolognese (pasta) sauce or shredded chicken and cheeses or even ham and cheese filings.To get really rich have even heard of a bechamel (white) sauce over chicken between the leyers of dough!

How else else can you take a stick of butter, a bunch of field greens a cup of cheese, some eggs and two handfuls of flour and come up with a hearty meal?
Cultural tid-bit:
Greeks consider cooking with butter barbarian.
It is in baking, on toast and with certain starchy vegetables such as potatoes and corn and peas. But not really more than that, IIRC. Green vegetables are served with oil and lemon and served at room temperature, not hot!
A normal salad dressing here in the USA is three parts oil to one part vinegar. For an extra refreshing summer taste do one part vinegar, one part lemon to two parts oil, MMMMM refreshing!
