IT's SPANKOPITA (Spinach and cheese pie except with leeks.)

Yiannaki (Johnny) My aunt [tia politica en espanol]by marriage not blood, learned to make Phyllo (filo) dough by hand from my grandmother (her mother-in-law)who was from the north of Greece. It is my understanding that these pies are a northern Greek/Balkan specialty.

I've got the spinach & cheese down to a science, now to get into leeks and cheese, cheese alone and cabbage(saurkraut).
Other variations include bolognese (pasta) sauce or shredded chicken and cheeses or even ham and cheese filings.To get really rich have even heard of a bechamel (white) sauce over chicken between the leyers of dough!

UUUMMMM GOOD!

How else else can you take a stick of butter, a bunch of field greens a cup of cheese, some eggs and two handfuls of flour and come up with a hearty meal?

Cultural tid-bit:
Greeks consider cooking with butter barbarian.
It is in baking, on toast and with certain starchy vegetables such as potatoes and corn and peas. But not really more than that, IIRC. Green vegetables are served with oil and lemon and served at room temperature, not hot!

A normal salad dressing here in the USA is three parts oil to one part vinegar. For an extra refreshing summer taste do one part vinegar, one part lemon to two parts oil, MMMMM refreshing!

Now back to the question. For me it's the American version of an English breakfast. Welocome to the golden arches restaruant!

The McDonalds is as a treat, the bagel is just about every day! (And remember girls, it's ALL pink on the inside....when you use pink cream cheese!)

You should see the faces I get when I offer a stale danish fried in butter.........Yummmmmm....Now if was in olive oil and lemon juice, maybe it would be a different story(ducks and runs........)YUK!(LOL)

Notice coffee as we know it is called "American" or "French".

Don't know what goes on now, but as the story suggests I was served TANG as orange juice overseas some years ago. I hear it's good to use to clean toilets. Seriously!

toggleswitch sorry about that but I think that the only good Turkish thing is .. the toilet! (you know... their toilets dont have a place to "sit" :P )

GadgetGary I LOVE bagel with Cheese (I cant believe that toggleswitch prefers bagel than mcdonalts); but here in Greece Bakery has only "Greek Stuff"
If you want to eat something different like bagel you have to go to a BIGGGG super market (lot of miles away from my town!!)
 
Greek Breakfast

Toggle kai Yiannimou, When we were in Athens visiting relatives back in 1984, we stayed at the Caravel Hotel in downtown Athens. Every day there were some workmen in the restaurant at the hotel having breakfast. Their breakfast consisted of bread (rolls) cheese (probably kesedi, forgive the spelling) and TWO BOTTLES OF WINE. Now... THAT's the way to start the day!!!!
