You have many options, Paul. You have double pole or single pole, double throw, single throw, delay on, delay off....etc. Pull up the McMaster-Carr website and you can see some of the relay options, both solid-state and mechanical. McMaster gives you a description of the functions to help you fit your needs to the device, and they have a nice selection. Grainger's is also a good source of relays and does a good job of providing operational descriptions, as well.
Relays are great fun to play with! I had an old Hobart KitchenAid dishwasher that had a water-heat delay in which the pump paused during heating. I rigged up some relays to keep it pumping during the heating pause to increase washability. (Back in the days when I had some time to play around with appliances.) You can look at my post, probably about fifteen years ago. I have done fun modifications to other machines as well. Relays are a tinkerer's toys!
