We've had a lot of snow here in the past week or so, and the temps are bitter cold. I know a lot others here are also braving through the winter. I had a leftover hambone in the freezer from the holidays and decided to put it to good use and make split pea soup.
For those who just want the recipe here 'tis:
1 lb bag split peas
1 meaty ham bone (you can omit if you want to keep it vegetarian)
1 medium-large onion, diced
1 1/2 cup diced carrots
salt & pepper to taste
pinch of herbes de provence (optional)
In a large pot combine 2 quarts of cold water, ham bone, split peas, onion, salt, pepper and herbes de provence. Bring to a boil, cover and reduce to simmer. Let simmer for one hour. Remove ham bone from pot and using a fork remove any meat that still may be connected to it. Return meat to the pot and add the carrots. Cover and continue to simmer for another 30 minutes. Serve with good bread and it's a wonderful meal for a cold night!
