Frying and or slathering a vegetable in butter means it is no longer considered a vegetable. *LOL* Any potential health benefit has been negated!

DELISH! Try green vegetables at room temperature and with an Italian-style salad dressing. Very refreshing and tasty! and if not oil and vinegar, try oil and lemon (OK and some vinegar too if you are not used to it!)

There is a restaurant in Connecticut called Joey Garlics that makes the best zucchini fries... you can't even tell its a veggie.
 
Squash no matter how it's prepared is just gross. Give me some brussel sprouts, or a nice tossed salad anyday. Caesar salad is my absolute favorite.
 
The log-cabin decor with knotty pine interior and fake tacky flowers as well are red-and-white checked curtains and table-cloths is off-putting, but the staff and the food is great!

Squash no matter how it's prepared is just gross.

Squash Casserole done like eggplant parmigian...excellent.

Here is a great recipe:
Yellow Squash Casserole

Mix 1 pkg. Peppridge Farm Stuffing according to directions.
Layer ½ in the bottom of a casserole.
Cook sliced yellow squash w/ onions and butter to desired doneness. Drain with a slotted spoon and place on top of stuffing in casserole.
Mix 1 can of Cream of Chicken soup with 8 oz. of sour cream and put on top of squash. Place remaining stuffing on top of the sour cream and soup mixture, then bake in a 350 degree oven till brown and bubbly.
 
As a hyphenated ethnic-American (first generation born here) I STILL can't fathom how much dairy "Y'all" eat.

uhm dairy is loaded with fat. A cow's milk gets her calf up to 200 lbs (Say 100 kg +/-) within a year.

Add fat to anything and it's tastier....(you chubby-chasers out there REMAIN SILENT! LOL)

So Tim, I'm guessing one can't help but like that recipe. LOL
