Just The Two of Us This Year
and thats fine with me, sometimes we really enjoy being home without company on Thanksgiving, and this is one of those years.
David always looks forward to his “Turk Bird” for T-day. And I enjoy cooking a turkey dinner. I bought a 6.5 lb. turkey breast. Today I baked the rolls, to reheat tomorrow, made the Lime Jello Salad, the dressing with homemade croutons from my homemade WW bread, no pie this year, baked a Pumpkin Pecan Crunch Cake, and got the yam casserole ready for the oven tomorrow. So, tomorrow will be easy. I’ll just need to roast the turkey breast, make the mashed potatoes, make the gravy, reheat the rolls, open a can of Cranberry Sauce and heat the peas and pearl onions,, and call it Thanksgiving.
And we both love the leftovers, and with a MW for reheating they taste almost as good the next day. We’ll have the leftovers for at least the next four days, so that’s a plus too, cooking already done for days.
We’ve got plenty to be thankful for, David’s retired now, we have good health, and happy marriage and a safe, dry, warm, paid for roof over our heads. We count our blessings.
