The Thanksgiving turkey is already done. I roasted it last week when I had time.

For many years I helped prepare Thanksgiving dinner for 250 people. We would roast 15 or 16 large whole turkeys (the church hall had commercial sized ovens) and would start a month before the dinner date. Every Saturday we would roast four birds. When they were done we let the cool off, we would carve them and remove as much meat as possible, then place the meat in large foil trays, cover with turkey stock and put in the freezer. A couple days before the dinner we would transfer all the trays from the freezer to the refrigerator to start thawing. The day of the dinner, we put them in the oven for an hour or so to heat and the turkey was ready to go! The only thing we had to make on the dinner date was some of the sides.

I continue this method at home except I just roast one turkey. Like John, I get them when they are cheap (just got one for 33 cents/pound!) and then roast, carve and freeze them a couple weeks in advance of serving. You don't get the big presentation with the bird on the table, but my crowd could care less about that - they just want to dig in and eat. I'm expecting 10 or so. Some family and some friends who otherwise wouldn't have a spot at a table somewhere.

Turkey, glazed ham, mashed potatoes and gravy, dressing, sweeet potato casserole, green bean casserole, corn pudding, whole cranberry and orange sauce, yeast rolls and butter, pumpkin pie.

I love to give food to my guests to take home if they want it, so I often don't have leftovers, but I always use the turkey carcass for soup or stock.

Well, I guess it's going to be Cracker Barrel this year. I talked to my sister a few minutes ago, and she said they, my nephew and his family in Deer Park, my nephew in Texas, and great niece from Wisconsin, are all going to Mexico for the week of Thanksgiving. Think I'll ask one of my buddies that likes the Barrel if he wants to go.
 
She thought I knew, and think she mentioned it a while back that it was possible. It was all contingent on her husband's PET scan result being good, which fortunately it was. He has had cancer of the throat and tongue, so she has had that on her mind since April. I couldn't go with them anyway, as I don't have a passport, plus can't afford to after spending a lot on getting my vehicle repaired.

I've been to Cracker Barrel on Thanksgiving several times before when they were away, and found it to be satisfactory. I like to go later when it's not so busy.

Things sometimes go that way, but at least you do have backup plans.

Quite honestly since Christmas follows so close on heels of Thanksgiving as one gets older am not so bothered about missing big family get together of former. In just a few weeks entire gang will be together again so can catch up, have nice big meal, etc..
 
Speaking of Wegmans

We finally have one in city and if family doesn't nail down plans by upcoming Friday that's likely were Thanksgiving dinner will be sourced. *LOL*

Even if have to pack things up and take to Mother's place for meal. Those DoorDash and Uber Eats people are forever leaving insulated tote bags lying about spare so am good to go.

I'll be micro convection roasting a 20 pound turkey in the caloric gas micro convection oven that's in the outdoor kitchen.

This might be the last year for the caloric it's getting very rusty in the oven liner. I have a spare range over at the warehouse. I'm gonna refurbish this winter and change it out. It seems they only last 10 years or so outdoors even though they're protected from the rain The humidity is just too much and anything that burns gas of course makes metal parts rust a little faster.

I baked a couple pies last night in the Thermidor micro thermal convection oven in the kitchen apple pie took 10 minutes. The pumpkin pie took 14. I probably should not have pre-bake the crust to get a little browner than I like, but I'm sure it'll be good.

I have everything ready to go. The turkey breast will go into the oven at 12:30pm. Yesterday I baked the Apple Pie and prepared the Yam casserole and dressing which will only need to be placed into the oven finish heating while the turkey breast rests before carving and while I make the gravy and boil the potatoes to mash them and cook the Petite Peas and Pearl onions. I made a doz Crusty Dinner rolls and of course the traditional Lime Jello salad.

Here is my dinner just family and my one of my best friends. A free Butterball turkey from BJ’s because I spent so much. Mashed potato, corn, green bean casserole made with homemade cream of Mushroom soup , potato bread stuffing, gravy, homemade rolls, homemade pumpkin pie.
