A Giant Hobart FT-900 with blower dryer. Notice how this monster dishmachine dwarfs other equipment around it. After it drinks 120 gallons of hot water to fill it's tanks It needs 4 operators "2 on each end" to keep it moving efficiently. These are VERY WELL MADE machines and clean like no other large dishmachine. Many are still in use after 20 plus years.

What did these cost new? What type of application would use a machine this incredibly large?

Who would have such things? Anyone with lots of dishes who required the throughput capacity. Hospitals, university or other cafeterias, government buildings installations.

If you know where to look (such as federal government sales/liquidations) you can find lots of things including dishwashers like this for very little (relative) money.
 
It was amazing to see the skill of the men who worked loading these machines. They would pick up a stack of plates between both hands then turn the stack sideways and move their arms back and forth across the pins, releasing plates uniformly to fill the pins. Glasses do have to go in racks. If you don't have someone at the discharge end, the conveyor stops when dishes hit the conveyor kill switch which I often experienced when I was operating a much smaller 3 tank machine by myself when I worked in a hospital kitchen.
