EGGS IN A NEST
Melt 3 tablespoons butter in an electric frypan set at 300 degrees. Suate thin slices of white bread onone side. Turnover and cover with a piece of American or Swiss cheese the same size as the bread. Open an egg over each slice, making certain not to break the yolk. Sprinkle with 1 tablespoon of finely chopped green herbs (chives, parsley, or marjoram, for instance) or with 1/2 teaspoon dried herbs which ahve been softened in hot water. Cut thick slices of firm tomato 1" thick. Sprinkle them with a few drops of onion juice. Dip in cornmeal seasoned with salt and pepper. Arang tomatoes around the edges of the pan. Cover pan, close vent, set temperature at 250 degrees and cook until eggs are nicely set. Turn the tomato slices once. Sasages may be fried in advance (keep them slightly underdone) thentucked around the rim of the pan to keep warm while tomatoes and eggs are cooked. Serve with creamed cooked spinach for luncheon.
