There was a thread here about logo changes that seems to have disappeared, but it got me thinking about Uncle Ben's Rice Pudding. Does anyone remember this stuff? Haven't' seen it since about 2012 or so. Absolutely my favorite rice pudding mix. The next up was Royal brand rice pudding. Wal-Mart carried this for years, but now it has disappeared too. It's like rice pudding was suddenly declared illegal or something. Does anyone know of a brand of rice pudding still on the market that does NOT contain eggs or call for them in the recipe? Thanks.

I think if it cannot be microwaved for 30 seconds, have it delivered by Uber Eats, or you need some cooking skills to make it these items are disappearing from the shelves. The younger generation has no need for any of these what we call "old home cooking comfort foods". I have the recipe for Rice Pudding that Wegman's Market sold, I will find it and post it if you want to try, it. Its 5 ingredients, Milk, heavy cream, sugar, rice and some vanilla, you cook it in the crock pot for a few hours.
 
Wegmans Markets Rice Pudding

Milk 76 Fl. oz.
Heavy Cream 16 Fl. oz.
Rice 9 oz.
Sugar 9 oz.
Add vanilla to taste after cooking I did 2 teaspoons.

Cook on low in CrockPot for a few hours until thick soupy texture. Stir a few times while cooking. It will thicken more when cooled.

That would be one hell of a lot of rice pudding. Here is my recipe, which is more or less how my Mom made it.

2oz Pudding Rice
1oz sugar
1 pint milk, ideally full fat although semi skimmed is just about acceptable,

I add a good sprinkling or fresh grated nutmeg, my mother always put in a handful of raisins and I do too.

My mother cooked it on a double boiler on the stove top, I cook it in the oven at 300.
Put rice in a deep Pyrex dish with sugar. Add milk. Throw in a handful of raisins and sprinkle nutmeg on top. Cook, uncovered for two hours or so, you will probably need to add some more milk if it gets too think. It will form a skin on top which tastes a bit like caramel, so give it a stir every 30 minutes or so

In the UK we get a short grain rice that os known as pudding rice (generic term) but my sister reckoned Arborio rice (risotto rice) would be OK too.

I made a large quantity of this rice a couple of years ago at a Wash In, partly as it was so easy and partly as the used dishes - I used several, I had a lot of men to feed - were a great test for dishwashers.

Al, that recipe i borrowed from a grocery store i worked in. The break down I only made for holidays. i don't really care for rice pudding only my wife does. but when my mom would invite us all for a holiday dinner, just brothers, sisters and our kids added up to 23 people. I have had dinner parties at my own house for church friends, I had sit down dinners for 30. Some of the recipes in my database I did not break down to your normal family size.
