New surface element control switches
You can put Robertshaw infinite switch kits in the stove if you’d like, GE also sells a new, infinite switch. They’ve gotten really crappy, however.
Even in daily use, the original switches should be highly reliable.
The only advantage to the infinite switches is you would have some settings in between the different settings.
The other advantage would also be that the entire element would be used on any heat setting not just one half or the other, etc.
I have a GE cooktop from 1965 in my weekend house that has pushbutton heat controls with just five settings per element, and I’ve always found it delightful to cook on and we do a lot of cooking.
