Westinghouse Peanut Butter Cookies

Donald asked me to make some peanut butter cookies, and being the good husband I am...LOL..I did, this has been my go to pb cookie recipe since I bought a 1947 Westinghouse range instruction manual at a yard sale when I was about 14..since ive decided to go Westinghouse...here they are.
3 cups flour.sifted/
2 tsp soda
1/4 tsp salt
Sift together and set aside.
Cream together
1 cup shortening
1 cup sugar
1 cup packed brown sugar
Add
2 beaten eggs 1 tsp vanilla
1 cup peanut butter
Blend well,
mix in the flour mixture to form a stiff dough, I chill it for 30 minutes or so, roll into small balls, press flat with fork, bake about 15 min at 375.

Cookies on the cooler racks wouldn't last long if I was there-Love cookies that have been just cooked out of the oven!!!I should try these-but use REAL peanut butter instead of the store bought!Just blend some Planters Peanuts in the Blendtec until they are ---Peanut Butter.

I have tried it, but I use all Happy Home flavorings, made in Bedford Virginia,I pay a little extra to get their natural vanilla instead of the artificial, to me its worth it.

Uses a potato masher on her PB cookies, If I try it they stick and make a mess!!!LOL

This is what I do when using a potato masher on PB cookies..

I simply spray the business end of the masher with a fast spray of Pam or Vegalene.

I have the 1940 edition of the Westinghouse Electric Range Cookbook and the recipe for Peanut Butter cookies is exactly the same as the one posted by Hans from the 1947 edition. I came to own this cookbook in 1983 when I moved into a duplex in Petaluma, Ca. that had a 1940 Westinhouse electric range, it was a Champion model KC-64. The cookbook was left in the range along with a copy of the 1949 edition too. This stove was a treasure! I was so sad when the oven went out and the landlord replaced it with an Almond Magic Chef, I believe in 1985. It couldn't hold a candle to the Westinghouse. I still use these cookbooks on a fairly regular basis. The recipes are simple and good.
