My restored Westinghouse roaster is sitting in the basement with nothing to do this winter. I last used it at Thanksgiving to keep the turkey slices warm after removal from the oven. Prior to that I made Italian beef for a July 4th party. For such a heavy-duty and versatile appliance there must be more uses than that!
I'd love to hear your input! How do you make best use of your roaster between holidays?
 
I sometimes feed large groups of people, so I use my two roasters for things like big batches of chili or beef stew, especially if I'm feeding people somewhere other than my house.

When I lived in a warehouse-style apartment, I had a roaster on a cart in the kitchen area. I used it to proof loaves of bread a couple of times. Worked well!
 
Since I have a rather small wall oven I use mine as a second oven. I bake cakes, casseroles or anything I would do in a regular over. This summer I made home made chili sauce to can and I used my electric roaster to simmer down the chili sauce for 10 hours. A couple cups of water between the inside and outside pans helps to keep whatever you're cooking from sticking.
 
I love using mine to make gallons of sauce with meatballs and Italian sausage. It simmers for hours without burning and then I package up the sauce, meatballs, and sausage in containers and freeze. It usually gets me through at least six months.

Great ideas.

Thanks for the good ideas. I had planned to make a bunch of something to freeze for a couple of weeks, perhaps the freezer and roaster have a date. Making stuff in bulk is a good use. Roaster doesn't monopolize the cooktop.
Long-term simmering and proofing bread are things I hadn't thought of. Clever stuff.
... and I had a taste for Jambalaya yesterday. We've got a great Southern-comfort style restaurant nearby but since its -7 degreees outside I elected to stay in. Pooh. Thanks for the tips. Everyone! Rev up those roasters!
Now that I use my roaster, am I officially Lutheran? :)
 
When I ues the Westinghouse Roster Oven

I use the Westinghouse roaster oven when cooking
“French Onion Beef Au Jus”
When fixing this in the Roaster I usually double or triple it.

Recipe
3 or 4 pound beef brisket

12 cup soy sauce
2 tablespoons of oil
1 clove of Garlic smash or diced
1 12 teaspoon of browning sauce
1 teaspoon of Beau Monde seasoning
1 package of dry onion soup mix
5 cups Water
Combine all these ingredients mix well
Then place brisket in a 4 quart baking dish, one with a lid.
Or your Roaster if doubling the recipe.
Pour mixture over the brisket.
Cover with lid bake at 350’ for 2 hours.

In a fry pan cook thinly sliced onions in some butter till caramelized
When done lit brisket let set for 20 min. Then Slice the brisket across the grain
Add 2 additional cup of water the remaining cooking liquid add your
Caramelized onions to the liquid return the sliced brisket.
Serve on a crusty French roll and some grated Gruyere or Swiss cheese.
Spoon Au jus over the open face sandwich.
Serve with Kentucky Coleslaw Enjoy!

Just make sure that you make your coffee in a West Bend or Regal 100 cup percolator also. And don't forget to coordinate your Jell-O salads according to the various colors of the church year too. This friendly advice comes to you from a genuine dyed-in-the-wool Lutheran.
 
Italian Beef Steak

From what I remember seeing somewhere is when you take a frozen piece(s) of steak, add to a very close fitting lidded pan, some herbs and maybe some onion, tiny drop of oil. Place on a very low heat and let cook for several hours in its own juice. Im sure the frozen steak has an important role in that the meat fibres once frozen are altered molecularly with ice crystals which break down and release juice upon heating which means the meat steams itself.
 
I need a new coffeemaker.

Don't have the West Bend or Regal Perks. Have two Sunbeam 30 cup units. Can I add them together?
I thought Catholic rules were hard.
Lutheran's tend to coordinate Jell-O according to colors of the church year? Too fun. Advent will be much for fun for me in the future.... thanks to JELL-O (official dessert food of the Vatican). DARN! That just cost me two more months in Purgatory. Man, I just rack them days up.
I have just printed out the brisket recipe which I will try post-haste.
 
Chili

Anyone have a good recipe for Chili? I need something that appeals to all but with a slight spicy kick to it.

Hubby invited all his employees and their families (about 30 people and children) over for the Superbowl and I thought that chili would make a good dish for all.

I know someone out there has something good for me-you guys are amazing with food and baked goods! :-)

Any other snackie (I know it's not a word but it looked better than snacky) recipes too?

Heather, here's my mom's chili (con carne) recipe. It's very low-rent, but people seem to like it.

1 lb ground beef
1 lb Jimmy Dean hot sausage
1 onion
1 can diced tomatoes (size of can depending on how much you want to stretch it)
1 can tomato sauce (size of can depending on how much you want to stretch it)
1 can kidney beans (or two. whatever you want)

chili powder to taste

Brown meat, sausage and onion. Put in a heavy pot. Add canned ingredients and chilli sauce. Cook until hot, or you are ready to serve it. It can hold all day, if need be.
