What is making this happen?

Frost and frozen moisture inside what's supposed to be a frost-free freezer:

The door won't shut completely due to the excessive amounts of food in there, so I often have to close it it more firmly after finding it open after the untold amount of time something in there pushes on it, or often closing the refrigerator door causes it to open, of which it's only noticed by me, who has to be sure everything closes more firmly...

Just a guess, but removing some of the excess food so the door shuts properly should cure this problem.

No air flow

You cannot have a freezer or a fridge operating properly if there isn't decent air flow/circulation in and around the goods. Clean that thing out LOL.

Assuming the package of fruit isn't holding the door open a little bit; that sort of frosting is usually caused by a bad door gasket or a door that isn't closing correctly.  Another cause can be that there are too many open containers of food in the fridge, releasing moisture into the cabinet.

If the fridge was recently cleaned, and the cabinet insulation was saturated with water, this can also cause the evaporator to get heavily coated with ice.

I used to get that with a bottom freezer when the kids didn't push it completely closed....

a few hours with the door closed will clear that up.....

but yeah, good advice, don't over pack the freezer....or have obstructions keeping the door ajar...

plus if its leveled correctly, the door should close and seal by itself...

one reason I do like the door alarm....an alert if not closed properly...
