Here, it's sutffed peppers with potatoes and onions to fill the extra space in the pan.

The stuffing is minced (chopped ) meat and rice in a red tomato sauce.

This tray is about to go into the oven.

MMMMMMMMMMMMMM Good!

Remember to slit the peppers with a knife and put water into the pan so the rice can drink and cook!

I'd show you what I had for dinner but it's in my stomach now.

A big juicy cheeseburger, PLAIN thank you, hamburger meat seasoned with SLAP YA MAMA seasoning on white bread (there were no buns). Dessert, the last bit of bread pudding.

Yes, there is a seasoning called Slap Ya Mama, only in Louisiana. And sometimes, when I find wet clothes in the closet, that doesn't sound like a bad idea.

Togs, we're on the same food wavelength! I made stuffed peppers last night, as well! The local HyVee grocery had red bell peppers on sale for 88 cents, so I snagged a half-dozen and stuffed them. Same type of rice/meat filling. With your Greek and my Italian genetics, how could it be any different, LOL?!

Anyone have any special recipes for Bread Pudding?

I love to take all the leftover Panetone, from the holidays, and let it get very stale (I dry it in the oven on VERY low) and I use this instead of regular bread. I don't add much sugar to the egg mix so that it isn't too sweet. The candied fruit in the Panetone adds that!

Served with a little cream, whiped cream or Marscapone....delicious!
 
Bread pudding?

My variation is to use two teaspoons of vanilla, and brown sugar instead of white. Gives it a nice butterscotch influenced taste. Also, try evaporated milk instead of regular.

Impending Potluck!

We have a neighborhood potluck thing tomorrow, and I am baking a cake for it as I type this (Nothing to get excited about - just a Duncan Hines yellow sheet cake) and I am going to make one of my favorite casseroles tomorrow before the shindig. It's an Eggplant and Minced Clam casserole, which sounds gross, but is really quite good.

I always go at these things trying to be Bree Van de Kamp, but usually end up as Hyacinth Bucket (sans the Royal Doulton, of course) We'll see how it turns out. If nothing else, the serving dishes will be fabulous.

The evaporated milk does several things for bread pudding. First, it does lend a sense of richness, even with the evaporated skim milk. Secondly, it adds to the caramel overtone. Also, it makes it a possibility if there are eggs but no fresh milk in the fridge.

Evaporated Milk.....

Here is a great bread pudding recipe from the Mr. Food cookbook.....He uses few ingredients and his food is tasty...

Georgia Bread Pudding

I cup sugar
1 can(12 oz.) evaporated milk
2 cups whole milk
4 egg yolks
5-1/3 tablespoons(1/3 cup) butter, melted
¼ cup raisins
1 tsp. vanilla extract
1/8 tsp. cinnamon
1/8 tsp. ground nutmeg
9 slices white bread with crusts, cut into cubes

Preheat oven to 400 degrees. In large bowl thoroughly mix the sugar, evaporated milk and whole milk and egg yolks. Add the melted butter, vanilla extract, raisins and spices, mix well. Add the bread cubes and toss to saturate bread. Pour mixture into a greased 8” square baking dish. Bake @ 25 minutes until pudding s lightly browned and set. Let cool before cutting.(The pudding will get firmer and be easier to cut when cool). Cut into squares.
