Does anyone know: in what year or model series was the last KitchenAid dishwasher offering that had 2 rinses standard on all wash cycles?

I think the 20 series had 2 rinses. The 21 series had a rinse between the prewash and wash and one rinse after the wash. Wasn't part of the 21 series produced by Hobart? Just looked at the 21 series service manual. It had a purge and a rinse after the main wash.
Was that a Stalinist purge?
I had both a 21 and a 22 Superba and used to fill a 3 or 4 quart Rubbermaid mixing bowl (with handle) with hot water and add it after the fill for the purge stopped. It was enough water to get some sprayed on the dishes and the drain following the purge was long enough to pump it all out. It was the only way to get dishes out of the machines without a fine white dust film on them. The residual alkalinity left in the machine by using just one after rinse contributed to the terrible rusting of the upper rack rails.

The 20 series was the last with the double rinses and the 18 Superba was the last with the triple rinses on all full cycles except the short wash.
When we got our KDC21D machine, I did not like the purges and single rinse so I put in a fill valve that I took the restrictor out of and it filled completely to where the float stopped the fill and that effectively provided additional full charge rinses during each purge. Those short purges,like Tom said,did aid in removing any soap residue as well as any food that may have been left on the dishes.
The only problem with the full flow is that water could splash out of the air gap on the side of the machine and leak on to the floor and if you should open the door in any cycle and quickly turn the machine back on, water would often push out of the bottom of the door. The solution was to throttle back the valve on the supply line so the machine could fill to a level that would almost trigger the float to cut off the water. Of course. You could just be careful and give the machine a few seconds to equalize the air pressure in the tub and then turn it on.
I have done the same on my Tall tub Whirlpool clones and it really makes a difference, but they are very prone to leaking at the air gap so you really have to work on getting the pressure just right on them. But they do delay the pump start after the door is closed so they are less likely to throw water out the front.
On my KUDP02IRWH2 tall tub. there are automatically 2 full rinses when the Heavy Wash option is used. But that does extend the cycle times and the machine has often run more than 2 hours to complete a cycle. But you can see the difference inside the tank after the cycle. No residue on the stainless steel surfaces and a nice shine versus the normal single rinse.
And an excellent point about how the lack of rinses contributed to the accelerated wear on the rack coating.

So the newer KA do only one full rinse on a regular cycle, Is this good? I mean many of us use tabs that are strong enough to clean a heavy soil load. If we use a tab on a lighter soil or normal load does this make the detergent concentration too strong for just one rinse to flush away? Or perhaps detergent concentration doesn't matter on dishes like it might on clothes.

I don't thihnk they stopped doing 2 rinses on their DW for a while afterward.

Whirlpool did not kill off two final rinses in their WP branded DWs, the WP models were not in direct competition with Asko and Bosch etc.
WP did not start to take control of KA DWs till 1986, the KD21 series was completely a Hobart design.
When the KA KD-21 DWs came out, WP Power-Clean, KM Ultra-wash DWs built by WP, GE DWs with the multi-orbit wash arm and filtering system and MT reverse rack DWs were all better performing DWs than KA DWs in cleaning ability.
Once WP took over KA we were actually taking back KA 21 and 22 DWs and giving the customers WP Power-Clean DWs to satisfy customers that were complaining about the cleaning performance of their new KA DWers

For a load that needs a good amount of detergent I run the S&S cycle and leave the main wash door open. I figure it is better to use the 2 cycles with the most heating for washing. Those would be S&S and Prewash. I let the main wash and purge be my rinses and the final rinse for sanitizing. Yet to not have everything come out perfect.

Two Full Rinses
You know, my electronic Whirlpool short-tub which I had installed in my townhome about three years ago only does the full two rinses when there's a heated wash, (which is default for the Pots & Pans). That machine turned out to be wonderful....I'd do a manual rinse-only, then I'd fill the open detergent dispenser full, and put just a dab into the covered dispenser. On the P&P cycle it would have a very extended first wash, drain, then a short second wash, short full rinse, and then an extended heated rinse. The loads came out sparkling, with no residue. I really don't think a purge then full rinse is enough after full detergent wash.
