Hi Folks

I am not sure how many of you have a seen and/own the Wolf Gourmet Mixer. I was one of the first in Canada to get this mixer (purchased last December). Although the Wolf Countertop appliances are made by Hamilton Beach and very pricy, the Wolf countertop appliances seem to be well made. Compliments our Miele Professional kitchen appliances nicely. For years I owned the Kitchen Aid Pro mixer and I thought of trying something different. I am please I did. I did kept my commercial 20 quart mixer for making bread (12 loaves).

This past weekend I made my Italian family homemade Raviolis (recipe from Southern Italy - pork/beef/fresh basil/oregano/garlic/parsley and Parmesan cheese). The pasta dough did not cause the mixer to stall.

That’s a beautiful mixer and a beautiful kitchen!

I’m intrigued by your process for making ravioli. I noticed that you don’t seem to close and seal each of the individual ravaolis. Is that a traditional way of making them in Italy? Do you experience any leakage when they are cooking?

I’ve never made Ravioli before, but this method appears to be a bit easier than what I expected. I’m inspired to try it myself.
 
Making Ravioli

I usually use a rolling pin (designed for Ravioli's), the rolling pin will seal each ravioli - but it is still packed from the move. I went back to using the old fashion way by sealing each ravioli with a fork each side - very tedious, but worth it ;)

My cousin got Wolf aplliances when they did their kitchen in their condo a couple years ago. They have a 36 inch cooktop, double ovens, and a huge SxS fridge. Not the $800 toaster oven though. Seriously?
 
<span style="font-size: 14pt; color: #008000;">When I as a kid, my relatives that came here from Italy used a ravioli roller that was at least 4' long. One person on each side of the rolling table. They made them on floured newspaper. They were like no ravioli you could buy today. Those were good times, many many years ago.</span>
 
Your kitchen is beautiful, the Wolves do compliment the Miele nicely. I have the countertop oven, it's a great oven for most everyday tasks but I wish they had put a dang light inside. It would be nice to get a good look before opening the door and all the heat goes *poof*.

Always have been intrigued by the mixer, not a small footprint but it looks quite powerful. Would love to see some pics and your bread-making method, that 20 qt. guy is a beast!

 
Wolf Oven

We were able to get a Wolf Oven on clearance...75% off (new is $800!) ! This was an older model, never used and has full warranty. We use this oven every day for quick meals. This is the best countertop oven we owned. The newer Wolf countertop oven models (Wolf Gourmet - Elite Series Oven) has a light and extra rack.

I wonder if this mixer was made by Kenwood-look on it and see if it was made in Britain.I have a version marked "Viking" and it is 9Q and has a 10A motor-its a "roto tiller in a bowel!"Most kenwood attachments should fit on the front and top power takeoffs.I have the blender-goes on the top PTO direct off the motor-there is a front PTO that is geared down-from the drive belt on the large drive pulley.The front PTO is for the meat grinder.
 
120 volt - 20 Quart mixer

The 20 quart mixer is 120 v (General GEM 120). I purchased the mixer from Costco several years ago ( during a limited promotion). Very strong mixer and works very well when making overnight buns using 25 cups of flour! The link to the mixer is below.

For my Wolf countertop mixer, I believe it was made by Hamilton Beach. The shipping of the mixer seem to come from the Hamilton Beach manufacturing plant.
