Maytag Dutch oven

For the Mytag ovenas the bottom plate over the gas burner weighed in around 40 to 50 pounds/ You would preheat the oven and then place a roast or even baked beans or a stew in the oven and let it cook for awhile then turn the oven off and not open it for severl hours and the heat held in the oven would slowly cook the meat to perfection. My mother had one from 1950 and for Sunday dinner for a roast or even roast chicken she would turn it on early then stqrt it cooking and by the time we went to church and got back it would be ready. She also put in vegatables in a cover dish to bake. I think they were super insulated also for that time frame.
 
Does it have something to do with religion? The instruction for altering the oven temp display in my Maytag stove are in the "Sabbath setting" section. alr2903
 
If One Observes Shobos

One of the thirty-nine things forbidden on Shobos is baking. Another is putting out a flame.

Therefore methinks the setting on your oven allows those observing to set the oven and not violate religous beliefs.

In the old days and in the old country, housewives would take their Saturday meals in large cast iron or similar pots to the local baker.The pots would stay in the banked fire to "cook" since it wasn't possible to do this on Shabbat. The women would return Saturday late afternoon or so when free to so so, and get their pots.
 
One other thing the Maytag Dutch Oven did to hold the heat was shut a damper in the oven vent, like the Chambers. Greg outlined the disadvantages of the system for routine baking.

The Sabbath mode on electronically controlled ovens allows the oven to remain on for more than the preset maximum time. A program built into the timers allows the ovens to operate X number of hours before the controls turn it off in case it was left on by mistake. Sundown Friday to sundown Saturday is around 24 hours. When electronic oven controls were introduced, there were problems for those who wanted to set the oven to a low temperature and have it operate for 24 hours without fiddling with the controls so manufacturers introduced the Sabbath mode which overrides the usual maximum hours of operation. As of yet, it will not light the Sabbath candles, bless the lights, or recite Kiddush.
 
Nor will a modern electronically controlled oven

knead the dough for the challah. It will bake the challah dough quite well, but not knead it.

Yes, the Maytag "Dutch Oven" functions similarly to a Chambers range. I grew up cooking on a conventional oven Maytag stove of the same vintage. The right front burner was a marvel. Great for stir-frying, but also great for simmering.
