I've never been to the King Ranch, but I'll bet those cowhands eat mighty good! I don't know if this recipe really came from there, but people have been making some version of it for years. Here's ours:

Mike-- I see there is another person who puts casserole dishes on foil-lined rimmed baking sheets. I hate overflows in the oven, so if it looks like there's even a small chance that might happen, I use a baking sheet.
The casserole looks delicious!
 
I learned my lesson long ago with lasagna so no matter what I bake in the oven that has alot of liquid I don't take the risk of it overflowing. Much easier to clean a foil lined pan than the oven bottom and racks. Not to mention the smoke show that happens when food hits the hot oven bottom.
One foil that I adore is the Reynolds Release nonstick foil. Nothing sticks to it and it saves in clean up.

Hey Kevin, I subscribed to your youtube channel and found this recipe but comments are turned off so I thought I'd post my comments here. I use Rotel's recipe for King Ranch Chicken but with changes (scan of recipe posted below):

 

As you can see in the scan, I crossed out the margarine and I use butter. I use a pablano pepper instead of a bell pepper. I use a white onion. I use a rotisserie chicken instead of regular cooked chicken - my local store makes them in Cajun, Jalapeno, Italian, and other flavors. I use the Cajun or Jalapeno seasoned rotisserie chicken. The last time I made this I used Red Gold's Chipolte version of Rotel tomatoes - this really put it over the top. Finally, I really like corn tortillas - I use 5-6 per layer instead of 4. I also tear them into fairly small pieces instead of strips.

 

I'm going to try some of your ideas the next time I make this: I'll add garlic, chili powder, and cumin.

I always thought the Ford Kings Ranch pickup trucks were a Texas only option. I didn't know they were sold everywhere. Yup, the same Kings Ranch.
