I thought Book Group was NEXT Saturday.

It wasn't. A friend, MaryAlise, called at 4 pm, and said it was tonight at 6 pm.

This is my Tuna Hotdish, what's yours?

I dash into the kitchen, and grab a 3 quart Corning Spice O' Life, and the Pam.

I then boil some water for noodles (8 ounces dry, medium width).

Chop and saute in butter, a medium onion, and one clove of garlic. Not until brown, but until tender.

Throw the noodles into the boiling water, and then get the rest of it together.

2 cans of Cream of Mushroom (I had Cambell's from the coupon special last month. The store brand works, too.)
2 cans of Chunk Light tuna in water, drained (Mr. Boris likes the water on his kibble.)
1 small can of mushrooms, drained
1/2-3/4 cup real mayonnaise. What it adds in flavour is worth the calories. I don't make this every week.
2-3 tablespoons milk or half-and-half (light cream). Depends on what's in the fridge, and has to be used.

Combine, and add the onions and garlic.

By this time, the noodles should be almost done. You don't want them very done, you want them just done.

Drain them, add them.

Add to the casserole dish, and top with whatever you have, crushed potato chips, crushed Ritz crackers....

I was out of chips, and the Gentleman Caller of last week finished the Ritz crackers. I made buttered bread crumbs...two slices of bread in the processor, with a glob of butter melted in the onion pan. Add while the processor is running.

Bake about a half hour in a 350F oven. If it looks anaemic, turn on the broiler (grill) for a few minutes, but watch carefully.

Serves 6-10, depending on what else is there.

I didn't have much leftover.

the uk cheats version lol

pack of pasta shapes eg penne or fusili, 300g or 10oz Tuna tin in brine, 1 packet of schwarz Tuna pasta bake mix and a pint of milk. Top with smashed up walkers ready salted crisps Gordon Ramsay eat your heart out! However being a chef i cant condone this recipe as it is the cheats version. I tend to make a veloute using a blonde Roux and fish stock adding my drained cooked pasta a can of sweetcorn diced peppers and finely chopped red onion. Herbs as you please and lightly toss in the canned tuna in brine. Top with good very mature cheddar cheese and if you like some parma reggiano and the compulsory crunched up plain crisps. Under medium grill until brown. Garlic bread is the side of the day as is a nice green leaf salad. Perhaps radicio, mache and water cress. I just go with the tried and true recipe for "Tuna-Noodle Bake" on page 32 of the 1962 Betty Crocker "Good 'n Easy" cookbook (that I was mostly raised up on ;-)

4 cups cooked noodles
1 can Tuna
1/4 cup chopped green pepper
1/4 cup chopped pimento
1 small onion chopped
1/2 tsp Salt
1 can Cream of Mushroom Soup
1 4oz can Mushrooms
1 cup grated cheese

Heat oven to 425. comaine all ingredients, using 1/2 the cheese. Pour into greased 1.5 quart baking dish. Top with remaining cheese. Bake 20 minutes.

Gets 'em every time. :-)
 
Tuna-Broccoli Hot Dish

In 2-quart Corningware casserole mix 1 can cheddar or cheddar-broccoli soup with 3/4 can water. Mix in 1 can tuna (drained), 1 package chopped frozen broccoli (thawed), 1 clove minced garlic, a little dill, and half a box of parboiled tri-color pasta. Sprinkle generously with Parmesan and bake 30 minutes at 375.
