That's a beauty!
Sorry to hear about the circumstances around you acquiring this mixer. That's a great gift.
I just bought the 6 Quart model and I love it (actually a Christmas present from hubby but I couldn't wait to use it). What I love about mine and yours is that they have DC motors. They seem to run much more smoothly than the older ones. I also love the smooth start. I have the 5 Quart Pro Line that I bought in 1989. It's still going strong but I really wanted a shiny new one with the glass bowl.
So far, I have made pizza dough a couple of times, pasta dough and used my pasta rollers, ground chicken for sausage, banana bread and cheesecake. When I was grinding the chicken it didn't even flinch. The older one would some times groan a little but kept going. I think your's has a bigger motor than this one so I can't imagine what you could do with it.
These are amazing machines that I suspect you will love. You may want to consider the smaller bowl with the combi-whip because these bowls are so huge. I used it to make the banana bread and cheesecake. It is the perfect size for smaller batches like that. I was afraid I wouldn't use it as much if I had to use that huge bowl for smaller amounts. I don't know if they make a smaller bowl for the 7 Quart but you may want to check into it.
I think you're gonna love it.
