I took my friend Al to his doctor appointment and found these recipes, and thought I would share them. The flourless chocolate cake sounds interesting.

Malcolm yes it would be [COLOR=#ff0000; font-size: medium; text-decoration: underline]gluten free[/COLOR].  To turn this into a cheese cake all is needed is to beat 16 ounces of cream cheese first then add the eggs and a teaspoon of vanilla .  Just no crust for the cheesecake.

There are so many options here now for those that are Gluten Free from packet mixes to flours, that it is so easy to either just substitute the GF flour or buy a packet mix and add the required water and eggs....

My favorite brand has to be Basco....their Date loaf is great (use 2 eggs, not one) and the Golden Butter Cake lends itself to alteration so easily with citrus rind and juice etc....

However, if ALDI ever have their GF range available in the US, grab some. I substitute it cup for cup in my fruit cake and chocolate cake recipies with great success only adding a touch more baking powder and a teaspoon of vinegar to the milk.

Nobody has ever been able to tell that they are GF to the degree that I took the chocolate cake to a morning tea for 20 people on Wednesday and they were giving me allocades as to how good it was etc...then I told them it was GF, they wouldn't believe me. It took my coeliac boss who knew and was eating it to tell them....

 
Your welcome Charles. I have thousands of recipes, that I've clipped or printed that I need to get organized someday LOL, some I've saved on my computer. I would love to have one of those smart scanners that I've seen advertised on TV.
