Honey cake, which is a traditional treat for Rosh Hashana to symbolically ensure a sweet new year is made with either warm coffee or tea to help thin the honey used in the cake batter. It uses cloves and cinnamon for spices. It is notoriously unstable and often falls which makes for a very moist cake.

WH Mixer....

Did you use one of your WH Mixers to whip it up? As I was reading it I was thinking what a fun time this would be using a vintage Sunbeam mixer.

Tom,

My mom's family made a similar honey cake with coffee (never tea, AFAIK) and RYE flour. It was very dense, moist ... and delicious!

Like Polish rye bread, this rye cake was usually made in a loaf pan and the end product was MUCH, MUCH heavier than than you'd expect.

I'll have to ask my mom if she has the recipe. I suspect she doesn't because I've no recollection of my grandmother making it. There were a handful of traditional foods my grandmother never cooked simply because she didn't like them. Lucky for my grandfather, he had a slew of sisters and sisters-in-law who kept him supplied with anything my grandmother didn't make.

I remember such a cake from when my Uncle Kel passed away, and it was tasty. There must have been 20 cakes in the kitchen the day of the funeral, along with any kind of food you can think of. There was so much they had to have some of it kept at the neighbors. This was in rural Mississippi.

We made this cake last night in our Hamilton Beach mixer, let it cool overnight, and just made the frosting in a Kenmore mixer. Looks absolutely delicious, going to serve it tonight. Can't wait!!

The cake was absolutely delicious! Very dense and most... Next time I might try baking in two round pans and making a layer cake, though. I don't like cake that's too sweet, and this has just the right amount of sweet. The cream cheese and lemon in the frosting really compliment the flavor of the tea.

Couldn't

resist baking this cake this morning. My hands still are lemon scented from zesting and juicing for the frosting. Anyway, it was a fun cake to prepare and can't wait to try it!

Thanks.....L.P.
